This is the very first dessert that I made and I got the recipe through the Nestle Philippines website. I first served this during Valentine’s day fo this year and was followed by Hubby’s birthday
For those who want to try this weekend, here is the recipe:
Ingredients:
CRUST
1 cup graham cracker crumbs
2 tbsp brown sugar
1/4 cup margarine, melted
1 tsp ground cinnamon
FILLING
1/2 tbsp unflavored gelatin
1 can (439 g) DEL MONTE Fresh Cut Crushed Pineapple, drained (reserve syrup)
1/4 cup cream cheese, softened
1/2 cup all-purpose cream, chilled
1/4 cup sugar
1 tbsp orange marmalade
TOPPING
1 tbsp pineapple syrup
1/4 cup orange marmalade
Instructions:
1 CRUST: Combine all ingredients. Pat mixture on bottom of square pan (7” x 7”). Cover and freeze for 10 minutes.
2 FILLING: Dissolve gelatin in 1/4 cup pineapple syrup. Heat until dissolved. Set aside. Beat cream cheese until smooth. Add all-purpose cream gradually and mix until well-blended. Stir in gelatin and sugar. Fold in DEL MONTE Fresh Cut Crushed Pineapple and orange marmalade. Pour over prepared crust. Chill until set.
3 TOPPING: Mix until well-blended. Spread on top of pineapple squares.

Gosh! I’ve been neglecting this blog for quite awhile and I’m so ashamed. I wonder how other bloggers can managed having two or more blogs.
For starters, there’s nothing exciting cooking up in my kitchen for the past few days thus I have nothing great to share.
Yesterday was the only exception where I tried cooking the soup that my late grandfather always prepared for us when my sister and I are on vacation and staying with them.
Though my grandfather is not here with us, my aunt and grandmother still cooked this soup which never fails to satisfy my tummy and taste buds
I will post a separate entry about it in a few but first I have to post the very first dessert that I created last February.
This will be my last promise that I will be more active in making entries in this blog. Hopefully I can keep it this time.
Yesterday afternoon I was at home playing Diablo II with my husband and then after a few hours I decided to try this game that I downloaded from the net last Friday.
The title of the game is Cooking Academy. Actually, I was looking for Cooking Academy 2 but I’m having a hard time getting a full version where I can get it for free so I opted for this one instead.
I was surprised to see the game when I opened it. It looks like your in a culinary school with different recipes for different entrees. I was thinking that it will be similar to the games that I played before like Diner Dash, Amelia’s Cafe, Diaper Dash, etc.
It’s like a real cooking class! I’m being graded on each meal depending on the time that I prepared the ingredients up to the time that I cooked them. While I was playing the game, I was also busy writing down the ingredients and procedures that flashes on my laptop screen…Ahahahaha!
So far I’ve done 7 recipes under Appetizer. I still have a long way to go because the last time I checked the cookbook tabs there are breakfast, lunch, dinner and desserts that I have to deal with.
Now I got curious on what’s in store in Cooking Academy 2.
It’s officially rainy season here in Manila. It all started last week and like a hobby it’s been raining everyday.
Last night was a little bit different compared to other days since it was raining cats and dogs! I was worried that it will be a hard time for me to get home but thankfully, the rain somehow tamed on my behalf
Anyways, before I headed home I decided to stop by the grocery and brought the ingredients I needed for this Filipino dish that is so yummy to eat especially when it’s raining since it is a soup with chicken and veggies! Totally healthy and satisying to the tummy
Here is the recipe if you want to give this a try at your home. Most Filipinos know this recipe by heart.
Tinolang Manok (Chicken Ginger Stew with Veggies)
Ingredients:
1 kilo whole chicken, cut into pieces.
1 small young papaya or sayote, cut into small pieces.
2 tablespoons ginger, crushed and slliced into strips
1/2 cup dahon ng sili (chili leaves)
1 liter of water
5 garlic cloves, minced
1 red onion, diced
4 tablespoons oil
2 tablespoons patis (fish sauce)
Instructions:
* In a stock pot, heat oil and sauté garlic, onion, tomatoes, chicken and ginger. Add water.
* Bring to a boil and simmer for about 20 minutes or until chicken is almost done.
* Season with patis or salt.
* Add papaya and continue to simmer for an additional 5 minutes or until papaya softens but not overcooked.
* Add sili leaves then turn off the heat.
* Serve steaming hot with plain rice.

The first time that I cooked this recipe was on Valentine’s Day of this year. A fellow blogger shared this recipe and since the procedures are easy and the ingredients are locally available, I decided to give it a try.
I’m so proud of myself after I’m done with this dish especially when it’s hubby’s turn to taste it! I was beaming with pride!

Ingredients:
Olive Oil
Butter
Garlic (lots of it)
Shrimps (with a dash of salt)
Ginger (lots of it)
Sugar
Mama Sita’s Barbeque Sauce or Oyster Sauce
Directions:
Melt the butter in the oil.
Saute the garlic.
Add the shrimps until cooked.
Add the ginger, sugar and Mama Sita’s.

This will also be the food that I’m going to bring for our get-together on Saturday with my ex-colleagues turned friends. Our “leader” decided for us to have a potluck for the food and since I’m running low on monetary funds to buy food that is ready-made, I’ll just have to do a grocery for the ingredients and charge it to my credit card.
A good friend of mine who happens to be a blogger like me (well, she’s the first one to be a blogger before I did) posted this video from Top Chef 4. I’m an avid fan of the show and by watching it, I got inspired to cook meals that are different from the usual Filipino Cuisine. So far, the only dish that I created is the Chiken Yakiniku…ahahaha!
Anyways going back to this video clip, there’s a contestant on the show named Dale who is a Filipino. He bravely created the traditional dessert that is always a hit especially during the summer season here in the Philippines and that is none other than Halo-Halo (Mix-Mix) which is composed of shaved ice, milk (condensed or evaporated), sugar, sweetened beans, sweetened fruits, etc. All you have to do is put the ingredients together and mix them. Thus the name Halo Halo
Surprisingly, the guest judge loved the treat!
